Easy Mexican Casserole
I found this delicious recipe online for Easy Mexican Casserole. This was the first time I made it. But it was so good I know I’ll cook it again.
Typically when I cook, I choose recipes that don’t have very many ingredients. I just hate to buy ingredients that I might not use again and then eventually have to throw them out.
Waste not, want not! As the saying goes.
Ingredients:
- 1 pound ground beef
- 1 can (15 oz) chili beans
- 1 can (8 oz) tomato sauce
- 2 tablespoons taco sauce (I used mild Pace Picante sauce)
- 4 teaspoons chili powder (I didn’t even use even 1 full teaspoon, as I can’t take it too spicy)
- 1/2 teaspoon garlic powder or salt
- 1 tomato, chopped
- 2 cups tortilla chips
- 1 cup sour cream
- 1/2 cup sliced green onions with tops
- 1 cup cheddar cheese, shredded
Directions For Easy Mexican Casserole:
Cook beef and drain. Stir in beans, tomato sauce, taco sauce, chili powder and garlic powder. Heat to boiling.
Place chips in an ungreased 12x8x2-inch baking dish. Top with beef mixture. Spread with sour cream. Sprinkle with onions, tomatoes and cheese.
Bake, uncovered, at 350 degrees for 20-30 minutes or until hot.
Arrange additional tortilla chips around the edge of the casserole. Serve with shredded lettuce, chili peppers, and taco sauce, if desired. (I skipped that step entirely. But you can add it if you desire.)
Time: 30 minutes
This is what it looked like right out of the oven. I love Mexican food.
It was very tasty. I had a salad with it. And best of all I can eat on this for four days most likely.
So I can get going decorating on my holiday decorating without stopping to fix a meal from scratch!

I like the quick and easy route, too, when it comes to cooking. This looks yummy, Mexican is one of my favorites. I would also use the mild sauce.

Well you are like me..I need to use the MILD sauce in recipes like this! 🙂 I cannot handle the hotter stuff / this looks wonderful! 🙂
I remember dating my first husband ( in my late teens ) down in Mon Valley ( where Joe Montana, football star, came from…two years ahead of me in school ) Anyway…over the river and bridge was a place that served ribs.
This was like a trailer or something…just standing up at a counter.But it was THE PLACE to be! 🙂
I could ONLY handle the "Mild Child" and still had tears streaming from my eyes and needed to blow my nose. Too much Fair Skinned Nordic in my Background, I guess….the Italians etc could handle the harder stuff.

Yum! This would make a good company dish too, if you needed to feed a crowd. It'd be easy to double the recipe.

My family hates casseroles and even more, they hate anything I make. Fortunately, Steve loves to cook. Now that our daughter lives near, she is coming over and cooking wonderful meals too.
