Kicked Up King Ranch Casserole
I found this Kicked Up King Ranch Casserole recipe online at Cooks.com. It was submitted by Carol Marie Brown.
I was hungry for Mexican food, so I got the ingredients to prepare and cook it.
I’m one of those people who love leftovers, which is why I often look for casserole recipes. I like to know I have a meal the next day. All I have to do is heat it up.
Kicked Up King Ranch Casserole:
- 3-4 boneless skinless chicken breasts
- 1 tbsp. oil (for browning chicken pieces)
- season salt, garlic powder, Mrs. Dash original
- 1 pkg. tortilla chips
- 1 (10 oz.) can cream of mushroom soup
- 2 (10 oz. ea.) cans cream of chicken soup
- 1 (10 oz.) can Rotel tomatoes (I use Chili Fixin’s)
- 2 cups Colby Jack or Mexican “fiesta” style shredded cheese
Instructions:

Cut the chicken into 1 inch cubes.
Season the chicken with your favorite seasoned salt, garlic powder, cumin, and Mrs. Dash.
Heat oil in a skillet and add the chicken. Stir fry until it’s done. Transfer to a large mixing bowl.
Add the soups and Rotel to the chicken. Stir well.
Gently stir in about half the bag of tortilla chips.
Transfer the chicken mixture to a 13×9-inch casserole pan.
Top with 1 more cup of tortilla chips, “for crunch”.
Then sprinkle with shredded cheese.
Cook in 350°F oven for 30 minutes.
That’s it! Then once it’s cooked you’re all ready to eat. A salad would make a great addition to this meal. You could dress the salad with salsa if you wished.
Fresh guacamole would even bring this meal up a notch or two.
Bring the family in. Call the kids or the neighbors. Tell them there’s a big casserole for everyone to dig into.
After I made this I put together a recipe for fudge. It’s setting up in the refrigerator right now. I guess I’ll go see if it’s ready to taste!
I've had this before and it's pretty darn good. Oh fudge…now I'm craving some!

I just made King Ranch casserole last Sunday. I absolutely love it. HEB makes in house tortillas and when I am in the store and I am enjoying the aroma of freshly baked corn tortillas, King Ranch casserole is all I can think of. Thanks for posting this so that those who have never enjoyed this yummy casserole can now enjoy it too!

Yum! I want to just stick my fork into the monitor and grab a bite! I love King Ranch casserole, I love the little bite that the Rotel gives it. I'll be making this after Christmas when I have leftover turkey.

That sounds delicious! I love King Ranch Chicken but my husband doesn't eat anything with "wet" chicken. I make recipes like that when he's out of town. 🙂
